Ingredients:

  • 1 package José Olé corn beef taquitos
  • 1 can green enchilada sauce
  • 1 can refried beans
  • 3 cups Mexican blend cheese
  • 2 cups sour cream
  • 2 Roma tomatoes, finely diced
  • ½ cup cilantro, chopped

Instructions:

  1. Cook 20 taquitos following packaging cooking instructions (or around 8 minutes in an airfryer.)
  2. Heat beans in a medium saucepan, stirring occasionally until heated through.
  3. Chop cilantro and dice tomatoes, then set aside.
  4. Pre-heat oven to 350ºF.
  5. When the taquitos are finished, transfer half of your taquitos into a baking pan. Layer half of your beans, green enchilada sauce, and cheese.
  6. Repeat, layering on the remaining taquitos, beans, sauce, and cheese.
  7. Place in oven and heat until melted (around 8 minutes.)
  8. Remove the dish from the oven and top with sour cream, tomatoes, and cilantro. Serve and enjoy!
