Ingredients
- 1 box José Olé Chicken & Cheese Taquitos
- 4 cups chopped romaine or greens of choice
- 1 cup cherry tomatoes, halved or quartered
- 1 avocado, diced or sliced
- ¼ cup red onion, thinly sliced
- ½ cup shredded cheddar or Mexican-style cheese
- 2 tbsp fresh cilantro, chopped
- Optional: 1 jalapeño, diced
Zesty Lime Dressing
- 3 tbsp lime juice
- 2 tbsp olive oil
- 1 tsp honey or agave syrup
- ½ tsp cumin
- Salt + pepper to taste
Optional Toppings
- Pico de gallo or salsa
- Sour cream or Greek yogurt
- Crushed tortilla chips
Directions
1. Cook taquitos per package instructions until golden and crispy, then slice into bite-sized pieces.
2. Combine romaine, tomatoes, onion, jalapeño, and cilantro in a large bowl.
3. Whisk together lime juice, olive oil, honey, cumin, salt, and pepper. Alternatively, add the dressing ingredients in a sealable jar, close the lid and shake vigorously to emulsify.
4. Toss greens with dressing, then top with taquitos, avocado, and shredded cheese and serve.
5. Optional: Add pico de gallo, sour cream or crushed chips for extra flavor and crunch.
