Mexican Fiesta

2 pkgs. José Olé® Quesadillas19 oz. enchilada sauce
24 oz. salsa (hot or med)
3 oz. cream cheese
2 cups Mexican blend shredded cheese
8 oz. sour cream
2 Tablespoons chopped cilantro
Spray a 13x9x2" casserole pan with cooking spray; place 4 José Olé® Quesadillas on bottom of pan. Dot with 1/2 of cream cheese. In a small bowl, combine enchilada sauce and salsa. Spoon this mixture over top of the 4 José Olé® Quesadillas. Sprinkle 1/3 cup of shredded cheese over the José Olé® Quesadillas. Repeat layer and sprinkle remaining cheese over top of casserole. Bake for 30 minutes. Garnish with a dollop of sour cream (per serving) and sprinkle cilantro over top.
Makes 8 servings.
