by Terri B.

1 box dirty rice mix
1 lb. hamburger lightly browned in small skillet and drained
1 (22.5 oz.) box José Ole Steak and Cheese Taquitos, partially thawed
2 cups shredded cheddar cheese
2 Tablespoons vegetable oil
1 cup each chopped tomatoes and onions
Sour Cream and Guacamole (optional)

Preheat oven to 400°F.

In a 2 1/2-quart saucepan combine 2 1/2 cups water and vegetable oil (optional), bring to a boil. Add package of dirty rice mix and meat, return mixture to a boil. Reduce heat, stir, cover and simmer over low heat for 20 minutes, stirring occasionally. Remove from heat and spread in the bottom of an 8x8-inch casserole dish. Place the José Olé® Taquitos over the rice mixture. Bake uncovered for 15-20 minutes or until heated through. Top with cheddar cheese, bake until cheese is melted.
