Tex-Mex Style Monte Cristo Sandwiches

1 (16 oz.) package José Olé® Grilled Chicken Quesadillas, thawed
1 qt. vegetable oil
1 1/3 cups water
2 large eggs
1 1/3 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
2 Tablespoons confectioners sugar

Pour the oil in a 12-inch skillet on medium-high heat or preheat a deep fryer to 365 degrees F. Whisk the water and egg in a medium bowl. Combine the flour, baking powder, and salt. Whisk into the egg mixture until smooth. Refrigerate until needed. Cut each Quesadilla into 3 sections. Secure the Quesadillas sections with toothpicks (count the toothpicks), dip in the batter and coat both sides. Carefully place in the hot oil. Cook until golden brown on all sides (about 2 to 3 minutes per side). Remove to drain on paper towels, remove all toothpicks (verify count), and dust both sides lightly with the confectioners sugar, and serve.

This recipe serves 4-6.
Prep time 8 to 10 minutes.
