Fiesta Meatloaf Surprise

2 lbs. ground beef10 José Olé® Mini Tacos
1 1/2 cups of your favorite salsa
1/2 cup shredded pepper jack cheese
2 eggs
1 cup seasoned bread crumbs
1/2 cup milk
1 teaspoon salt
1/4 teaspoon pepper
Mix ground beef, salsa, eggs, bread crumbs, pepper jack cheese, milk, salt and pepper in a large mixing bowl. Divide mixture into thirds. Press 1/3 of mixture into a 6x10" ungreased meatloaf pan. Layer 5 José Olé® Mini Tacos across top of mixture, making sure to stay 1/2-inch from all edges. Press second third of meat mixture on top of taco layer and down around sides of tacos. Add a second layer of 5 José Olé® Mini Tacos. Top with remaining meat mixture, pressing down into loaf pan. Bake at 350° for 1 and a half hours. Turn fiesta meatloaf onto a platter and let set 15 minutes. Top with spicy glaze as follows:
Spicy Glaze
1/4 cup ketchup
1/8 cup Worcestershire sauce
1 Tablespoon brown sugar
3 shakes cayenne pepper
Heat all ingredients in saucepan until boiling. Cool for several minutes and pour over warm meatloaf or use as dip. Slice meatloaf into 1/2 slices and enjoy.
