1 (16 oz.) box José Olé® Grilled Steak and 3 Cheese Quesadillas
1
(6 oz.) can water chestnuts, drained and coarsely chopped or 3/4 cup coarsely chopped jicama

4 strips of crisply fried, crumpled bacon bits
1/4 cup chopped cilantro
1/4 cup picante sauce or spicy French salad dressing
1/2 cup butter or margarine
1/2 cup chopped, toasted, shelled sunflower seeds (optional)

Microwave each frozen Quesadilla on a plate on high for approx. 1-2 min. until pliable and able to open tortilla without tearing.
Spread meat and cheese mixture out into a small circle in the center of the tortilla, leaving at least one inch of empty space around outside edge.
Mix water chestnut or jicama, bacon, and chopped cilantro with salad dressing or picante sauce, then spoon mixture into center of tortilla, spreading evenly within center.
With a sharp knife, cut tortilla in half and roll each half very tightly, securing with toothpick before dropping into preheated frying pan set to medium with a small amount of butter.
Turn each rollup frequently during frying for 5 to 7 minutes.
Remove from heat and roll in chopped sunflower seed mixture if desired.

Serves 4, with 2 rollups each.
Preparation time: 15 min.
Cooking time: 5 to 7 min.
