Philly Style Chimichangas

1 (18 oz.) box José Olé® Steak and Cheddar Mini Chimichangas
2 cups thinly sliced bell peppers
2 cups thinly sliced onions
1 cup thinly sliced mushrooms
2 Tablespoons cooking oil
Salt and pepper to taste
2 cups shredded Swiss cheese

Preheat oven to 375°F.

Place Mini Chimichangas on cookie sheet. Place sheet in center of oven. Bake according to package directions for 12 to 15 minutes.
Heat cooking oil in medium-size skillet over medium heat. Add peppers, onions and mushrooms. Season to taste with salt and pepper. Sauté mixture until tender. Remove from skillet and place on paper towels to drain.
Remove Mini Chimichangas from oven. Top evenly with vegetable mixture. Top with Swiss cheese. Place under broiler until cheese is bubbly. Remove from oven. Place on serving platter. Serve hot.

Serves four to six.
